
Stuffed
Stuffed pasta inverts the rules. Everywhere else the sauce carries the flavor and the pasta carries the sauce. Here the flavor is sealed inside, and the dough exists to protect it. That is why the family's canonical dressings are the quietest in the repertoire: melted butter with one herb, or broth, the oldest serving method on record. Every region folds its parcels differently and names them jealously. The geometry varies, the principle never does: do not bury the filling.
