
Shaped shorts
This is the engineering wing of the pasta world, shapes designed on purpose to do a job. Helixes lodge sauce in their grooves. Shells cup it. Bells and flowers ruffle their edges to grab what smooth surfaces shed. Many began as hand shapes rolled on rods and boards, then crossed to the extruder when a die could fake the geometry at scale. Judge each one by where the sauce can sit: a channel, a cavity, a ruffle, a twist. If you can name where the sauce hides, you have understood the shape.
