The difference
Troccoli vs Tonnarelli
Both end up as a square-section strand, but the tool sets them apart. Troccoli is Pugliese, cut by rolling a grooved pin called a troccolo across the dough sheet. Tonnarelli is the Roman and Abruzzese chitarra strand, pressed through the wires of a wooden frame. Same square bite, a rolling pin against a wire harp.
