Paccheri vs Rigatoni
Paccheri is the giant of the two, a very wide smooth tube that collapses into a flat oval under sauce, while rigatoni is narrower and ridged. Rigatoni's ridges grip, paccheri's sheer size lets it cradle a chunky seafood or meat sauce, sometimes stuffed.
