The difference
Lagane vs Lasagna
Same ancient root, opposite finish. Lagane are short broad ribbons boiled and tossed, most often with chickpeas as lagane e ceci, the rustic southern dish. Lasagna is the wide sheet layered with sauce and baked. The word descends from the Latin laganum either way, but one is a loose ribbon, the other a baked stack.
