The difference

Cavatelli vs Lumache

Both cup a sauce, but cavatelli is a hand-rolled hollow, a short dough log dragged into a rough little trough, while lumache is an extruded ridged shell curled like a snail. Cavatelli is open along its length, lumache closes into a shell with one mouth. Hand against die, trough against shell.
