The difference
Tacconi vs Maltagliati
Both are flat cut pasta for soups and rustic sauces, but tacconi are deliberate squares or diamonds, patches named for a cobbler's mend, while maltagliati are the irregular offcuts left from trimming other shapes. One is cut on purpose, the other is the leftover scrap.
