The difference
Strascinati vs Orecchiette
Both are dragged southern shapes from the same gesture, but orecchiette is turned over the thumb into a domed little ear, while strascinati stays flat and open, dragged longer and larger across the board. In Bari the two names blur; elsewhere the dome marks orecchiette, the flat drag marks strascinati.
