The difference

Sagne incannulate vs Busiate

Both are hand-twisted shapes, but sagne incannulate is a flat Salento ribbon wound into a loose open spiral, while busiate is a Sicilian strand coiled around a reed into a long tight corkscrew. The flat ribbon twist against the round corkscrew.
