The difference
Occhi di Lupo vs Paccheri
Both are wide smooth tubes that swallow a hearty sauce, but they differ in length and behavior. Occhi di lupo is a short wide tube cut at roughly the bore of candele, holding its round shape on the plate. Paccheri is longer and thin-walled, so it collapses into a flat oval under sauce. The short ring keeps its eye, the long one folds.
