The difference

Gemelli vs Strozzapreti

Both read as twists, but gemelli is an extruded S strand wound into a neat even helix, while strozzapreti is a hand-rolled strip left deliberately uneven. Gemelli is smooth and uniform, strozzapreti rougher and chewier. The machine makes one, the hand makes the other.
