Fusilli vs Strozzapreti
Fusilli is extruded, an even machine corkscrew that comes out the same every time. Strozzapreti is a flat strip rolled and twisted by hand, so it stays irregular and a touch rough, with a denser chew. Fusilli's regular spiral is built to catch sauce, while strozzapreti's hand-rolled body is the whole point of it.
