The best shapes for vodka sauce

Tomato and cream brought together with a splash of vodka, which helps two things that separate on their own hold as a stable pink emulsion. Italian-American, and the vodka is doing chemistry rather than adding flavour.

Tomato and cream emulsified into a clinging pink coat. It films everything but shines where ridges hold a thicker layer.

Italian-American by adoption, 1970s-80s menu history. Canonical: penne.

What we would not put it on

Delicate fresh egg strands. The emulsion is heavy enough to overwhelm them, and they tear under it before they reach the fork.
