The difference

Conchiglioni vs Manicotti

Both are big shapes you stuff and bake, but conchiglioni is a giant ridged shell open along one side, while manicotti is a wide ridged tube open at both ends. The shell cups its filling, the tube is piped full. Either takes ricotta and a baked sauce.
