The difference

Agnolotti vs Ravioli

Both are flat stuffed pasta, but agnolotti is the Piedmontese one, usually smaller and made by folding a single sheet over the filling and pinching, where ravioli seals two sheets. Agnolotti del plin are pinched into little pillows by hand.
