The difference
Tortelli vs Ravioli
In much of the north these name the same thing, a flat parcel of egg pasta sealed around a filling, and Treccani defines tortelli as otherwise called ravioli. Where a difference is drawn, tortelli is the regional egg-pasta version with named fillings like pumpkin or chard, while ravioli is the broad term used the country over, square or round, egg or semolina dough. Mostly a matter of where you are standing.
