The difference

Strozzapreti vs Trofie

Both are hand-rolled, but strozzapreti is a longer twisted strip from Emilia Romagna, thicker and more uneven, while trofie is a short Ligurian spindle tapered to a point at each end. Strozzapreti takes a meat or mushroom sauce, trofie the classic pesto. Length and the pointed ends tell them apart.
