The difference

Mezze maniche vs Tortiglioni

Both are ridged tubes, but mezze maniche is short and wide, a stubby cut named for a half sleeve, while tortiglioni is longer and narrower with ridges that spiral around the body. Mezze maniche's wide mouth takes a chunky sauce, tortiglioni's winding grooves hold a clinging one. Width against the spiral.
