The difference
Fazzoletti vs Lasagna
Both are flat sheets of pasta, but they part ways at the oven. Lasagna is layered with sauce and baked. Fazzoletti, the handkerchiefs, are boiled a few at a time and plated loose under their dressing, classically Ligurian pesto as mandilli de saea. Same sheet, one baked in stacks, the other draped on the plate.
