The difference

Conchiglie vs Orecchiette

Both cup a sauce, but conchiglie is a ridged seashell, factory made, while orecchiette is a smooth concave ear pressed by hand on a round disc, the Puglian shape. The shell scoops, the ear cradles. Conchiglie suits a chunky sauce, orecchiette the classic with broccoli rabe.
