The difference

Casoncelli vs Ravioli

Ravioli is two sheets of pasta sealed flat around a filling. Casoncelli is folded, not layered, a single sheet wrapped into a half-moon around Bergamo or twisted like a candy wrapper in the Valle Camonica. The Lombard filling is rustic and faintly sweet, meat with amaretti and raisins, and the dressing stays to butter, sage, and pancetta. Ravioli is the broad category, casoncelli a specific regional fold.
