The difference
Candele vs Ziti
Both are smooth Neapolitan tubes dressed with La Genovese and ragu, and candele is essentially the long form. Candele are sold as full length canes, close to half a meter, snapped by hand into rough pieces before they go in the pot. Ziti is the shorter, ready cut tube. Same family and sauces, the difference is whether you break it yourself.
