The difference

Agnolotti vs Tortelloni

Both are filled parcels, but agnolotti is a small flat Piedmontese pillow sealed along the edge, while tortelloni is a large Emilian square folded over ricotta and herbs. Agnolotti is bite sized and often dressed with butter or its own roast juices, tortelloni big enough to be a plated course. Size and region divide them.
