The difference

Tortelloni vs Ravioli

Both are large stuffed pasta, but tortelloni is folded and pinched into a plump ring from a single square, while ravioli is two flat sheets sealed around the filling. Tortelloni is the Emilian ricotta and greens parcel, ravioli the open canvas for almost any filling.
