The difference

Tortelli vs Tortellini

Both are Emilian egg-pasta parcels, and the names sit one diminutive apart. Tortelli is the flat sealed square or rectangle, about 2 to 3 cm a side, filled by region with pumpkin, ricotta, or chard. Tortellini is the ring, a square of sfoglia folded into a triangle over a notarized pork, prosciutto, and mortadella filling, then wrapped around the finger and pinched closed. Pick tortelli for butter and sage, tortellini for broth.
