The difference
Tagliolini vs Spaghetti
Close in width, different in build. Tagliolini is a flat egg ribbon 2 to 3 mm wide and about 1 mm thick that cooks in 1 to 2 minutes fresh, while spaghetti is a solid round semolina strand 1.9 to 2.4 mm across that takes 9 to 12 dried. Pick tagliolini for butter, broth, or shaved white truffle, since a delicate ribbon wants a light dressing. Pick spaghetti for carbonara, cacio e pepe, or tomato, where a gauge near 2 mm has the bite to stand up to guanciale and pecorino.
