The difference
Stringozzi vs Strozzapreti
The shared priest-strangler name hides two different shapes. Stringozzi is the long Umbrian strand, hand-rolled from flour and water into a squarish shoelace, dressed alla spoletina or with truffle. Strozzapreti is the short Emilia-Romagna twist, a flat strip rolled and broken into stubby lengths. One is a long lace, the other a short curl.
