The difference

Ravioli vs Tortellini

Ravioli are flat sealed pillows, two sheets of pasta pressed around a filling. Tortellini are folded into a ring around a fingertip. Ravioli is the open canvas for almost any filling, tortellini is the Bolognese specialty eaten in brodo.
