The difference

Pappardelle vs Fettuccine

Both are flat egg ribbons, but pappardelle is far broader, wide enough to drape a heavy wild boar or game ragu, while fettuccine is a medium Roman ribbon for butter and cream. Reach for pappardelle when the sauce is big and chunky.
