The difference

Pansotti vs Ravioli

Both are sealed stuffed pasta, but pansotti is the triangular Ligurian one, folded over a filling of wild greens and soft cheese and dressed with walnut sauce. Ravioli is the broad term for flat parcels cut square or round, filled and sauced any number of ways. The triangle and the preboggion greens mark pansotti.
