Mafaldine vs Tagliatelle
Both are flat ribbons, but mafaldine has ruffled edges on both sides and runs a bit wider, a little crown of a noodle, while tagliatelle is a plain flat egg ribbon. The frills on mafaldine catch more of a rich sauce along the edges.
