The difference

Fettuccine vs Mafaldine

Both are flat ribbons, but fettuccine has clean straight edges while mafaldine is wider with a ruffle running down both sides. Those frills are the point of mafaldine, catching a sauce a smooth edge would let slip. Fettuccine leans on butter and cream, mafaldine wants something with body to grab.
