The difference

Cappelletti vs Tortelloni

Same Emilia Romagna family, opposite ends of the size scale. Cappelletti is small, a peaked hat folded around a savory filling and dropped into broth. Tortelloni is large, a broad square of sfoglia folded over ricotta and herbs and served with butter. The little hat goes in soup, the big parcel is a plated course.
