The difference

Cappellacci vs Tortellini

Both are stuffed egg pastas from Emilia Romagna, built for different bowls. Cappellacci is the Ferrara parcel, a square of sfoglia folded over sweet Violina squash and cheese and pinched into a peaked hat, dressed in butter and sage. Tortellini is the ring around a pork, prosciutto, and mortadella filling, made for broth. Squash and butter, pick cappellacci. Meat and broth, pick tortellini.
