Balanzoni vs Tortelloni
Balanzoni are green tortelloni: the same large Bolognese folded parcel, but the dough is tinted with spinach and the filling adds mortadella to the ricotta. Plain tortelloni keep a pale egg dough and a ricotta-and-herb filling. Same fold, the green one is balanzoni.
