The difference

Agnolotti vs Tortellini

Agnolotti is a flat sealed pillow, a Piedmontese parcel pinched closed along its edge, with the del plin version pinched into small segments. Tortellini is folded into a ring, a triangle of dough wrapped around a fingertip and joined at the ends, from Emilia Romagna. One lies flat, the other curls into a navel.
