The difference

Agnolotti vs Cappelletti

Both are small stuffed parcels, but agnolotti is a flat Piedmontese pillow sealed along the edge, while cappelletti is folded into a peaked hat in Emilia Romagna. Agnolotti stays low and square, cappelletti rises to a point. Region and fold, not filling, divide them.
