The difference

Tortellini vs Cappelletti

Both are small stuffed rings, and the line blurs by region. Tortellini are folded from a square around a navel of pork and Parmigiano, the Bologna specialty for broth. Cappelletti, little hats, are usually folded from a round and often hold a lighter filling, the Romagna version.
