Scarpinocc vs Casoncelli
Both are Bergamasque stuffed pasta dressed in butter and sage, but the filling and shape diverge. Casoncelli are the wider tradition, a folded parcel with a rustic, faintly sweet meat filling. Scarpinocc come from the village of Parre, shaped like a little cloth shoe and filled meatless with cheese, breadcrumb, and warm spices. Meat and half-moon against cheese and shoe.
