The difference

Pappardelle vs Tagliatelle

Both are flat egg ribbons, the difference is width and what they carry. Tagliatelle is medium, the everyday Bolognese ribbon. Pappardelle is the broad one, wide enough to drape a heavy game or wild boar ragu that would overwhelm a narrower cut.
