The difference
Pappardelle vs Mafaldine
Both are wide ribbons, but pappardelle is the broadest of all, a smooth flat band built for Tuscan game ragu, while mafaldine is narrower and trimmed with a ruffle on each edge. Pappardelle is all flat surface, mafaldine's frills do the gripping. Width and the wavy edge separate them.
