The difference

Mafaldine vs Tagliolini

Both are egg ribbons, but mafaldine is a medium band trimmed with a ruffle down each edge, while tagliolini is a narrow flat strip with clean edges. Mafaldine's frills grab a richer sauce, tagliolini's thin smooth body suits broth and light dressings. The ruffle and the width are the tell.
