The difference

Pappardelle vs Tagliolini

The widest and the narrowest of the egg ribbons. Pappardelle is a broad flat band, sometimes over two centimeters across, built for Tuscan game ragu. Tagliolini is barely wider than a strand, made for delicate sauces and broth. Same dough, opposite extremes of width.
