The difference

Cjarsons vs Casunziei

Both are alpine half-moon stuffed pasta with a sweet-savory filling, dressed in butter and smoked ricotta. Cjarsons are from Carnia in Friuli, their filling a shifting mix of potato, herbs, raisins, and cinnamon. Casunziei are from the Ampezzo Dolomites, the famous version a beet-red filling. Friuli against the Dolomites, cinnamon against beet.
